A great one for a stormy weekend with a hot drink, these hemp brownies are delicious! You could enjoy this mix as mini muffins or brownies. Light and fluffy yet not at all dry. Add walnuts to the mix for a more authentic brownie.
Makes 8-10 mini muffins/brownies
1/4 cup hemp oil
2 ripe bananas- mashed
1/3 cup coconut syrup
1/2 cup water
2/3 cup raw hemp protein powder
2/3 cup blanched ground almond flour
1/2 cup cocoa powder
1/4 tsp vanilla powder
1 heaped tsp baking powder
Extra walnuts/almonds/hemp seeds- optional
Blend the wet ingredients together and set aside.
Mix the dry ingredients together in a medium bowl and then add the wet ingredients. Mix lightly but well, adding in extra nuts if desired. The batter should be thick and easily spoonable.
Spoon the batter into mini muffins cups or a square lined cake pan. Bake at 180C for approximately 20 minutes (maybe slightly longer for brownies) until browning on top. Enjoy this stormy weekend!
