One of my favourite simple recipes for summer is this lemon blueberry smoothie. Packed with heathy fats from the nut paste and antioxidants from the blueberries... winner!
Oh and it's so pretty... everyone will want some. We just need that sunshine to come back again!
Recipe: Lemon blueberry smoothie
- 2 cups frozen blueberries
- 1 banana
- Juice of half a lemon (plus grated rind for top)
- 2 heaped tbs nut paste (either almond or cashew)
- 1 1/2 cups water
Blend everything together until very smooth. Add a little extra water if you prefer a thinner smoothie. Pour into glasses and grate a little lemon rind on the top of each.
Note: as an alternative to lemon you could try 1/4 tsp vanilla powder blended through.
