Creamy colada smoothie

Now that spring is here and the earth is beginning to come to life, we look towards summer time.  Have you booked your summer holiday yet?  If not... don't worry today I'm bring the summer sunshine to you, all wrapped up in a silky smooth fruit smoothie. 

The key ingredient? Yes, you guessed it- nut paste. The perfect way to create a creamy indulgent recipe, for breakfast or dessert, with all the benefit of the good fats that nuts provide.

This is such a simple recipe and if you use frozen banana and frozen pineapple chunks you could blend to form a soft serve ice cream dessert  (maybe wait for the hot summer days to try that one out!)

Recipe: Creamy colada smoothie

Serves 1 - 2

Ingredients:

  • 1 large ripe banana- cut into chunks
  • 1/2 cup fresh or canned pineapple
  • 1 heaped tbs coconut milk power (30% or 60%)
  • 2 heaped tbs cashew butter
  • 1 tsp vanilla extract
  • approx. 10 ice cubes

Method:

Blend together all ingredients untill super smooth and creamy. Pour into a large glass, or two smaller ones and serve immediately.
