Smoothies are a brilliant start to the day. Quick and simple and perfect when you are on the go. But for those days when time is a plenty I love making a thicker smoothie, pouring it into a bowl and eating it like ice cream! This makes the perfect breakfast or even a summer pudding as it has that soft ice cream consistency. It also tastes great topped with goji berries or nut pastes.
Recipe: Berry Smoothie Bowl
- 100g frozen mixed berries
- 1 handful of fresh spinach
- 250ml dairy free milk (eg. coconut/hemp milk)
- 1/4 ripe avocado
- 1 frozen banana
- 2 tbsp ultra fine high protein almond flour
- 2 tbsp cocoa nibs
Place all the ingredients, except the cacao nibs, in a blender and blend until smooth. Top each bowl with cacao nibs and more berries if desired. Enjoy!
