Recipe: Dukkha Argan Dip with Dough Dipping Sticks

Serves 2

Ingredients:

Oil

Dukkah Dip

  • 100g sesame seeds
  • 50g mixed seeds (pumpkin, sunflower, linseeds and pine nuts all work well)
  • 1 tsp ground coriander powder
  • 1 tbsp mixed dried herbs
  • 1/2 tsp quality salt
  • 1 tsp whole coriander seeds

Dough Sticks

Method:

First toast the sesame, coriander and mixed seeds in a frying pan with no oil on a low heat. When the first few 'pops' happen or they turn brown, then remove from heat and allow to cool.

To make the dough stick, blend all the ingredients together until smooth.  Grab about a tbsp of the sticky mixture (oil your hands to make this less messy) and roll into a finger/sausage like shape, roughly 7cm long. Do this for all the mixture, making roughly 10-12 sticks. Place the stick in a frying pan with some oil on a medium heat, turning regularly until brown and baked. Remove from heat and allow to cool.

To finish the dip take the cooled toasted seeds and the other dip ingredients and pulse in blender about 3 times to get an even consistency.

Serve the dough sticks fresh and dip in argan oil followed by the dukkha dip, delicious!

The dip also goes great with vegetable crudites as shown in the pic below and this recipe should mean you have some dip left over (which can be stored in a air tight jar) ready for another day!
