It's been a while since we've had a proper cookie recipe and with the new sunflower seed protein powders now in store it seemed a good time to get experimenting with a chocolate version! The 55% is an excellent high protein flour replacement with it's neutral taste and powder consistency. These cookies have a great crunch factor... this is down to using the coconut sugar over syrup. I always find that cookies with a 'wet' sweetener are always softer than the 'dry' sugar versions, still lovely- but something to be aware of if a crisp cookie is more your thing!
