The shelled hemp seeds now available in the RealFoodSource store are a great addition to your diet. They are high in protein, dietary fibre and omega fatty acids. Here they are added to vegetable noodles with avocado to maximise good fats and nutritional goodness.
Now it's Spring I love using my spiralizer to make all sorts of vegetable noodles! Courgette noodles (or 'coodles') is the classic, and a great alternative to high carb and pasta and noodles.
I added a few extra flavours which of course you could tweak for your own preference… Maybe some chillies for an extra kick? Different herbs? Or even use the sauce on its own is a dip!
Recipe: Hemp and Avocado Noodles
serves 1 (can easily make more)
- 1 courgette
- 1 small avocado
- 3 tbs shelled hemp seeds
- 3-4 fresh mint leaves
- juice of 1 lime
- 2 tsp argan oil (or any liquid oil)
- salt and pepper to taste
Prepare the courgette noodles using a spiraliser and set aside (alternatively use a julienne peeler for thin strips without the curl!)
Blend all remaining ingredients together until smooth. Mix through the noodles and serve immediately. You can add any toppings you fancy.
Note: I haven't tried storing the sauce, but I would imagine it needs to be eaten fresh or at latest the next day, avocado has a tendency to go brown upon exposure to air.
